Mediterranean Black Bean Salad

2 (15-ounce) jars dark beans, washed and depleted

1 container slashed green ringer peppers

1 container slashed red ringer peppers

1 container slashed tomatoes, unpeeled, unseeded

1 container slashed avocado, cut into ½-inch solid shapes (around 1 medium avocado)

½ container diced onions

¼ container slashed crisp parsley or cilantro

Dressing

2 tablespoons new lime juice

1 tablespoon additional virgin olive oil

2 cloves garlic, minced

½ teaspoon salt

Put beans, peppers, tomatoes, avocado, onions, and parsley in a substantial dish. In a little bowl, join lime juice, olive oil, garlic, and salt. Race until joined and pour over salad.Toss well to coat. Refrigerate for 2-4 hours to permit flavors to mix, and serve.
